Course Overview
The Level 3 Diploma in Advanced Professional Cookery (Kitchen and Larder) supports you to progress your skills and knowledge if you have completed a Level 2 catering qualification or are looking for an alternative route to advance your career without an apprenticeship. This course is designed to help you develop the advanced techniques and professional understanding needed to work as a chef in a commercial kitchen.
During the course, you can build advanced practical skills through hands‑on work in the kitchen. You will develop confidence preparing and cooking high‑quality dishes, including producing three‑course meals for lunch, dinner and events. Learning focuses on refining preparation methods, presentation and workflow, helping you understand how professional kitchens operate at an advanced level. You will also explore wider professional topics such as gastronomy, food safety supervision and supervisory skills within the hospitality industry.
The course covers advanced techniques for producing meat, fish and shellfish, game, poultry, vegetable and vegetarian dishes, helping you expand your recipe knowledge and technical ability across a range of menu styles. Maths and English are included to support your professional development, strengthening skills that are essential for communication, organisation and progression within the industry. By the end of the course, you will have developed advanced cookery skills, supervisory awareness and practical experience that support progression into professional chef roles or further culinary training.
