Course Overview
The Professional Patisserie and Confectionery Level 2 Diploma supports you to develop the basic craft skills needed to work in pastry and confectionery. It is suitable if you are interested in becoming a pastry chef or want to build and refine practical skills in a professional kitchen environment.
During the course, you will develop hands‑on skills producing a wide range of sweet and savoury items. Learning focuses on preparing hot and cold desserts, biscuits, cakes, sponges, fermented dough products and paste products, helping you understand the techniques and standards used in professional patisserie and confectionery. You will also explore the catering and hospitality industry, gaining insight into how kitchens operate and how menus are planned and costed. Food safety and health and safety are embedded throughout the course, alongside learning about healthier food options and special diets, supporting safe and inclusive catering practices.
Practical learning is supported by developing workplace skills such as organisation, teamwork and communication. Maths and English are included to support your overall development and progression within the industry. By the end of the course, you will have developed a solid foundation in patisserie and confectionery skills and a clearer understanding of professional kitchen environments. This qualification supports progression onto further chef training or continued development within pastry, bakery or wider catering pathways.
