Course Overview

The Professional Patisserie and Confectionery Level 3 Diploma supports you to develop advanced skills and knowledge for working as a patisserie chef within the catering and hospitality sector. It is suitable if you are progressing from a Level 2 patisserie qualification or if you are an experienced chef ready to specialise further in pastry and confectionery. 

Throughout the course, you will build on your existing skills to develop a deeper understanding of professional patisserie techniques. Learning focuses on producing a wide range of high‑level pastry items, including fermented dough and batter products, hot, cold and frozen desserts, biscuits, cakes, sponges and paste products. You will also develop specialist skills such as producing petit fours and creating decorative items and display pieces. You will explore gastronomy and how creativity, presentation and technique combine within professional patisserie. 

The course also develops your understanding of food safety at a supervisory level and introduces key supervisory skills used within hospitality environments, supporting progression into more senior kitchen roles. Practical training is central to the programme, helping you refine precision, consistency and organisation in a professional kitchen setting. Maths and English are included to support your wider professional development and progression. 

By the end of the course, you will have developed advanced patisserie and confectionery skills and a strong understanding of professional practice. This qualification supports progression into specialist pastry roles, senior kitchen positions or continued training within the hospitality and catering industry.

To study this course you will need GCSEs at grade 4 (grade C) or above in Maths or English, plus a Level 2 qualification in Patisserie or similar. Applicants are also required to successfully attend an interview event.
Assessment for this course includes practical assessments, written assignments, written theory papers, and an end of year practical synoptic assessment.
